While I have never sung the praises of banana based desserts, this dessert changed my tune.
I have never been one to drink alcohol either, but boy, when you add it to my food, I always seem much happier to eat it. Not to mention, I think I’d eat anything if it’s been carmelized. This recipe is perfect to serve “last minute” guests, because it can’t be made ahead – and it only takes about 5 minutes, so you’re not going to keep anyone waiting. And, anytime you flambe, it’s always a show! I love that there’s not a lot of ingredients in this recipe, and several of them I always have on hand. If you want something different and easy and downright tasty, here you go!
4 bananas, cut in half and then in half again lengthwise
1 stick of butter
1/2 C brown sugar
1/4 C dark rum
1/2 C candied pecans or walnuts (optional, but amazing)
Melt the butter over medium heat. Add the sugar and stir together. Add the bananas and cook until caramelized over medium-high heat. Pour in the rum and catch a flame from a BBQ lighter (stand back!). Let flame die down and serve over good french vanilla ice cream. Sprinkle with candied nuts.
