Mom’s Tortilla Pinwheels

Mom would be ok with me telling you that she’s not much of a Martha Stewart in the kitchen. Cooking just isn’t her thing. Now, crossword puzzles, on the other hand – she slays those. And, she’s the best female navigator I’ve ever had. She’s a human GPS, I tell you. But, she really should steer clear from the kitchen (love you, mom!)

These tortilla pinwheels though, are one thing of hers that I can never seem to get enough of.

Chili Lime Chicken Skewers with Avocado Crema Dip

While living in Connecticut, Dan and I had a tradition to watch the Oscars with our fellow movie loving friend, Rosanna. Along with that tradition, it was a ritual to make ridiculously good food that was neither healthy or low fat. This recipe, however was low fat comparitavely and ridiculously amazing (thank you, Rosanna!). So good in fact, that I scrap it’s appetizer status and make it for dinner from time to time. Roasted Eggplant Spread

Party season is upon us. It’s that time of year when you’re asked to contribute a dish to a festive pot luck, or perhaps you’re the one providing the whole spread. One thing I love and that’s always a hit at parties are warm gooey dips. You know, the cheesy spinach artichoke kind (sounds deceivingly good for you), or the chicken wing dip (which doesn’t sound good for you in the slightest). I often can’t stop once I’ve started with those. But, I can’t tell you how many times people have tasted this Eggplant dip I bring to parties and have been pleasantly surprised by their satisfaction from the flavor, especially knowing it is void of fattening products. The best Guacamole

Holy Guacamole!!! This stuff right here is sooooo good that it keeps me from emptying a bag Ruffles chips and a container of onion dip (most of the time). Good news is that it’s also sooooo good for you! The avocados alone contain more potassium than bananas and are loaded with heart healthy types of fats. And then, there’s the laundry list of vitamins that tomatoes gift to us. We’ve all heard rumors about garlic helping combat sickness, but what you might not know is that limes can give us beautiful glowing skin! This does it for me right there.
